- Grate the zucchinis and carrot and place them in a large bowl.
- Add the shredded cheese, eggs, chopped green onion, salt, pepper, and optional garlic.
- Mix all ingredients until well combined.
Cooking

- Scoop spoonfuls of the mixture into the skillet, flattening them slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from the skillet and serve warm.
