Ingredients
  

Vegetable Mixture
  • 2 medium zucchinis, grated Make sure to squeeze excess moisture out.
  • 1 medium carrot, grated
Binding Ingredients
  • 1 cup shredded cheese (mozzarella or your favorite)
  • 2 large eggs
  • 3-4 tablespoons chopped green onion
  • to taste salt and pepper
  • 1 clove garlic (minced) or 1/2 tsp garlic powder Optional

Method
 

Preparation
  1. Grate the zucchinis and carrot and place them in a large bowl.
  2. Add the shredded cheese, eggs, chopped green onion, salt, pepper, and optional garlic.
  3. Mix all ingredients until well combined.
Cooking
  1. Heat a non-stick skillet over medium heat and add a little oil.
  2. Scoop spoonfuls of the mixture into the skillet, flattening them slightly.
  3. Cook for 3-4 minutes on each side or until golden brown.
  4. Remove from the skillet and serve warm.

Notes

Zucchini Patties can be served as a main dish or side dish. They taste great with dips like yogurt, sour cream, or salsa. You can also serve them in a burger bun.
