Ingredients
  

For the Filling
  • 3 pieces egg yolks
  • 3 tablespoons all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 8 oz milk heated until just boiling
For the Pastry
  • 1 sheet puff pastry thawed if frozen

Method
 

Preparation
  1. Preheat the oven according to the puff pastry instructions.
  2. In a bowl, whisk together the egg yolks, sugar, and vanilla extract until smooth.
  3. In a saucepan, heat the milk until just boiling and gradually whisk it into the egg yolk mixture.
  4. Return the mixture to the saucepan and cook over medium heat, stirring until thickened.
  5. Remove from heat and fold in the flour.
  6. Roll out the puff pastry and cut it into triangles.
  7. Place a spoonful of the filling at the base of each triangle and roll up to form horns.
  8. Bake according to puff pastry instructions until golden brown.
Serving
  1. Allow to cool slightly before serving.
  2. Serve warm, optionally dusted with powdered sugar.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for about a week. Best enjoyed fresh! Experiment with different fillings, such as chocolate or fruit preserves.
