  • 1 pound shrimp, peeled and deveined
  • 2 cups bok choy, chopped
  • 3 pieces eggs
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 pieces green onions, sliced (for garnish)

Method
 

Cooking
  1. In a large pan, heat sesame oil over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Push shrimp to one side and crack the eggs into the pan, scrambling them until fully cooked.
  5. Add chopped bok choy and soy sauce, stirring until bok choy begins to wilt.
  6. Season with salt and pepper to taste.
  7. Garnish with sliced green onions and serve warm.

Notes

For extra flavor, consider adding ginger along with the garlic. You can use frozen shrimp if fresh is not available; just make sure to thaw and drain them well. Adjust the thickness of the sauce by adding more or less soy sauce based on your taste. Store leftovers in an airtight container for up to 3 days.
