Method
 

Preparation
  1. Peel and chop the potatoes into small pieces.
  2. Boil the potatoes until tender, then drain.
  3. In a bowl, mash the cooked potatoes.
  4. Beat the eggs in another bowl and season with salt and pepper.
  5. Mix the beaten eggs into the mashed potatoes until well combined.
  6. Heat a pan with butter or oil over medium heat.
  7. Pour the mixture into the pan, spreading it evenly.
  8. Cook until the bottom is golden, then flip to cook the other side.
  9. Serve hot.
