Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • to taste Salt and pepper
For the Pasta
  • 8 oz pasta (such as fettuccine or penne)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Fresh parsley for garnish

Method

Preparation
  1. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  2. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until golden and cooked through, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add the remaining 2 tablespoons of butter, then stir in the heavy cream and Parmesan cheese. Cook until the sauce is smooth and creamy.
Cooking the Pasta
  1. Meanwhile, cook the pasta according to package instructions. Drain and add to the sauce, tossing to combine.
  2. Finally, add the chicken back to the skillet, mixing everything together.
  3. Garnish with chopped parsley before serving.

Notes

To enhance the garlic flavor, sauté some extra garlic with the butter before adding the cream. For a bit of spice, consider adding red pepper flakes to the sauce. For a twist, substitute the chicken with shrimp or mushrooms. This dish can be made gluten-free using gluten-free pasta. For a lighter version, try using half-and-half instead of heavy cream. Leftovers can be stored in an airtight container for up to 3 days.
