Preparation
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until golden and cooked through, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, add the remaining 2 tablespoons of butter, then stir in the heavy cream and Parmesan cheese. Cook until the sauce is smooth and creamy.
Cooking the Pasta
- Meanwhile, cook the pasta according to package instructions. Drain and add to the sauce, tossing to combine.
- Finally, add the chicken back to the skillet, mixing everything together.
- Garnish with chopped parsley before serving.
Notes
To enhance the garlic flavor, sauté some extra garlic with the butter before adding the cream. For a bit of spice, consider adding red pepper flakes to the sauce. For a twist, substitute the chicken with shrimp or mushrooms. This dish can be made gluten-free using gluten-free pasta. For a lighter version, try using half-and-half instead of heavy cream. Leftovers can be stored in an airtight container for up to 3 days.
