Ingredients
  

For the potato puffs
  • 2 cups mashed potatoes Can be leftover or freshly made.
  • 1 cup shredded cheese (cheddar or your choice) Any melting cheese works.
  • 1/4 cup green onions, chopped
  • 1/4 cup breadcrumbs
  • 2 large eggs For binding.
  • to taste Salt and pepper
  • as needed oil for frying Vegetable or canola oil works best.

Preparation
  1. In a large bowl, combine the mashed potatoes, cheese, green onions, breadcrumbs, eggs, salt, and pepper. Mix well until everything is incorporated.
  2. Shape the mixture into small puffs or balls.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the potato puffs until golden brown on all sides, about 3-4 minutes.
  3. Remove and drain on paper towels. Serve warm.

Notes

Serve warm with dipping sauces like sour cream, ketchup, or spicy aioli. For a healthier option, consider baking the puffs instead of frying them. You can also experiment with different types of cheese or mix in spices like garlic powder or herbs for added flavor.
