Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
Filling
  • 3 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of the prepared pan.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese and 1 cup sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Fold in the diced apples and cinnamon. Pour the cream cheese mixture over the crust.
  4. Drizzle caramel sauce over the top and swirl with a knife for marbling.
Baking
  1. Bake for 30-35 minutes or until the center is set.
  2. Allow to cool completely, then refrigerate for at least 2 hours before slicing into bars.
Serving
  1. Serve chilled, optionally topped with vanilla ice cream or whipped cream.
  2. Sprinkle chopped nuts over the bars before serving if desired.

Notes

For a smoother texture, ensure your cream cheese is softened at room temperature before mixing. Use a mix of tart and sweet apples for depth of flavor. Additional caramel sauce can be added before serving.
