Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of the prepared pan.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Fold in the diced apples and cinnamon. Pour the cream cheese mixture over the crust.
- Drizzle caramel sauce over the top and swirl with a knife for marbling.
Baking
- Bake for 30-35 minutes or until the center is set.
- Allow to cool completely, then refrigerate for at least 2 hours before slicing into bars.
Serving
- Serve chilled, optionally topped with vanilla ice cream or whipped cream.
- Sprinkle chopped nuts over the bars before serving if desired.
Notes
For a smoother texture, ensure your cream cheese is softened at room temperature before mixing. Use a mix of tart and sweet apples for depth of flavor. Additional caramel sauce can be added before serving.
