Classic Homemade Pie Recipe
(Makes one 9-inch pie)
Flaky Pie Crust:
- 2 ½ cups (315g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar (optional, for sweet pies)
- 1 cup (225g) cold unsalted butter, cut into cubes
- 6-8 tbsp ice water
Filling (Apple Pie Example):
- 6 medium apples, peeled and sliced
- ½ cup (100g) sugar
- 2 tbsp brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp cornstarch or flour
- 1 tbsp lemon juice
- 2 tbsp butter, cut into small pieces (for dotting on top)
Instructions:
1. Make the Pie Crust
- In a bowl, mix flour, salt, and sugar.
- Cut in cold butter using a pastry cutter or fingers until the mixture looks like coarse crumbs.
- Add ice water, 1 tablespoon at a time, and mix until the dough holds together.
- Divide into two discs, wrap in plastic, and chill for at least 1 hour.
2. Prepare the Filling (for Apple Pie)
- Toss apples with sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
- Let it sit for 15 minutes while you roll out the dough.
3. Assemble the Pie
- Roll out one dough disc on a floured surface to fit a 9-inch pie pan.
- Place the dough into the pan and trim any excess.
- Pour in the filling and dot with butter.
- Roll out the second disc and place it on top (or cut into strips for a lattice).
- Seal the edges and cut small slits for ventilation.
- Brush with an egg wash (1 egg + 1 tbsp water) for a golden crust.
4. Bake the Pie
