Homemade Pies Recipe

 






Here’s a basic homemade pie recipe with a flaky crust and a delicious filling. You can customize it with your favorite fruit or custard filling!


Classic Homemade Pie Recipe

(Makes one 9-inch pie)

Flaky Pie Crust:

  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar (optional, for sweet pies)
  • 1 cup (225g) cold unsalted butter, cut into cubes
  • 6-8 tbsp ice water

Filling (Apple Pie Example):

  • 6 medium apples, peeled and sliced
  • ½ cup (100g) sugar
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp cornstarch or flour
  • 1 tbsp lemon juice
  • 2 tbsp butter, cut into small pieces (for dotting on top)

Instructions:

1. Make the Pie Crust

  1. In a bowl, mix flour, salt, and sugar.
  2. Cut in cold butter using a pastry cutter or fingers until the mixture looks like coarse crumbs.
  3. Add ice water, 1 tablespoon at a time, and mix until the dough holds together.
  4. Divide into two discs, wrap in plastic, and chill for at least 1 hour.

2. Prepare the Filling (for Apple Pie)

  1. Toss apples with sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
  2. Let it sit for 15 minutes while you roll out the dough.

3. Assemble the Pie

  1. Roll out one dough disc on a floured surface to fit a 9-inch pie pan.
  2. Place the dough into the pan and trim any excess.
  3. Pour in the filling and dot with butter.
  4. Roll out the second disc and place it on top (or cut into strips for a lattice).
  5. Seal the edges and cut small slits for ventilation.
  6. Brush with an egg wash (1 egg + 1 tbsp water) for a golden crust.

4. Bake the Pie

  1. Preheat oven to 375°F (190°C).
  2. Bake for 45-50 minutes, until golden brown.
  3. Let cool for at least 2 hours before slicing.

Variations:

  • Berry Pie – Use a mix of berries with sugar and cornstarch.
  • Pumpkin Pie – Use a spiced pumpkin filling with evaporated milk.
  • Pecan Pie – Fill with a mix of pecans, eggs, sugar, and corn syrup.
