Ingredients:
- 2 cups whole milk
- ½ cup heavy cream (optional for extra creaminess)
- 3 large eggs
- ½ cup sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- Ground nutmeg (for garnish)
Instructions:
- Preheat oven to 325°F (160°C).
- Heat the milk & cream in a saucepan over medium heat until warm (but not boiling).
- Whisk eggs & sugar in a bowl until well combined. Add vanilla and salt.
- Slowly add warm milk to the egg mixture, whisking constantly to prevent scrambling.
- Strain the mixture through a fine-mesh sieve for extra smoothness.
- Pour into ramekins or a baking dish.
- Bake in a water bath: Place ramekins in a baking pan and fill the pan with hot water until it reaches halfway up the ramekins.
- Bake for 40-50 minutes, or until the custard is set but still slightly jiggly in the center.
- Cool & serve warm or chilled, with a sprinkle of nutmeg on top.
