Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- ½ cup shredded cheese (cheddar, mozzarella, or a mix)
- ¼ cup grated Parmesan cheese
- ¼ cup all-purpose flour (or breadcrumbs for extra crispiness)
- 2 tbsp chopped chives or green onions (optional)
- ½ tsp garlic powder
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- 1 tbsp melted butter (for richness)
Instructions:
- Preheat Oven: Set to 200°C (400°F). Grease a muffin tin or line with silicone liners.
- Mix Ingredients: In a bowl, combine mashed potatoes, eggs, cheeses, flour, chives, garlic powder, salt, and pepper. Stir well.
- Fill Muffin Tin: Spoon the mixture into the muffin cups, filling each about ¾ full. Smooth the tops slightly.
- Bake: Bake for 20–25 minutes, or until golden and crispy on top.
- Cool & Serve: Let them cool for a few minutes, then gently remove. Serve warm with sour cream or dipping sauce.
