Stuffed Pepper Casserole

This easy stuffed pepper casserole has all the flavors of classic stuffed peppers—savory ground beef, tender bell peppers, rice, and melty cheese—without the hassle of stuffing individual peppers. It’s a perfect one-pan comfort meal!

Ingredients:

  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can tomato sauce
  • 1 cup beef broth (or water)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup uncooked white or brown rice
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • 1 tbsp olive oil (for cooking)
  • Fresh parsley for garnish (optional)

Instructions:

Step 1: Cook the Beef & Veggies

  1. Heat olive oil in a large oven-safe skillet over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Stir in onion, bell peppers, and garlic. Cook for 3-4 minutes until softened.

Step 2: Add the Sauce & Rice

  1. Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, black pepper, and paprika.
  2. Add uncooked rice and mix well.
  3. Bring to a simmer, then cover and reduce heat to low. Let cook for 20 minutes, stirring occasionally, until rice is tender.

Step 3: Add Cheese & Bake

  1. Preheat oven to 375°F (190°C).
  2. Sprinkle shredded cheese over the casserole.
  3. Transfer to the oven and bake uncovered for 10-15 minutes, or until cheese is melted and bubbly.

Step 4: Serve & Enjoy

  • Garnish with fresh parsley.
  • Serve hot, with crusty bread or a side salad!

Tips & Variations:

  • Make it low-carb: Swap rice for cauliflower rice and reduce liquid.
  • Use different proteins: Try ground chicken, turkey, or sausage.
  • Add a little heat: Sprinkle in red pepper flakes or hot sauce.
