Simple Spinach Stuffed Pastry Recipe

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • ½ tsp salt
  • 2 tbsp olive oil or butter
  • ½ cup warm water (adjust as needed)

For the filling:

  • 2 cups fresh spinach, chopped
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • ¼ cup feta cheese (optional)
  • 1 tbsp olive oil

Instructions:

  1. Prepare the dough:

    • In a bowl, mix flour, salt, and olive oil.
    • Gradually add warm water, kneading until you get a soft, smooth dough.
    • Cover and let it rest for 30 minutes.
  2. Make the filling:

    • Heat olive oil in a pan, sauté onions and garlic until soft.
    • Add chopped spinach, salt, and spices. Cook for a few minutes until wilted.
    • Remove from heat and let it cool. Mix in feta cheese if using.
  3. Assemble the pastries:

    • Roll out the dough and cut into circles or squares.
    • Place a spoonful of filling in the center, fold over, and seal the edges.
    • You can brush the top with egg wash for a golden finish.
  4. Bake or fry:

    • Bake at 180°C (350°F) for 20–25 minutes until golden brown.
    • Or fry in a pan with a little oil until crispy on both sides.
