Spicy Ketchup Meatloaf Recipe

This juicy, flavorful meatloaf is packed with spices and topped with a sweet & spicy ketchup glaze for the perfect balance of heat and richness!


Ingredients

For the Meatloaf:

✔️ 1 ½ lbs ground beef (or a mix of beef & pork)
✔️ ½ cup breadcrumbs (or crushed crackers)
✔️ 1 small onion (finely chopped)
✔️ 2 cloves garlic (minced)
✔️ 1 egg
✔️ ½ cup milk
✔️ 2 tablespoons Worcestershire sauce
✔️ 1 teaspoon salt
✔️ ½ teaspoon black pepper
✔️ 1 teaspoon smoked paprika
✔️ ½ teaspoon cayenne pepper (adjust for heat)
✔️ 1 teaspoon dried oregano or thyme

For the Spicy Ketchup Glaze:

✔️ ½ cup ketchup
✔️ 1 tablespoon hot sauce (Sriracha, Tabasco, or your favorite)
✔️ 1 tablespoon brown sugar
✔️ 1 teaspoon apple cider vinegar
✔️ ½ teaspoon chili powder


Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease a loaf pan.

2. Make the Meatloaf Mixture

  • In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, and seasonings.
  • Mix gently with your hands or a spoon until well combined (don’t overmix!).

3. Shape & Bake

  • Shape the mixture into a loaf on the baking sheet, or press it into a loaf pan.
  • Bake for 40 minutes uncovered.

4. Prepare the Glaze

  • While baking, mix ketchup, hot sauce, brown sugar, vinegar, and chili powder in a small bowl.

5. Glaze & Finish Baking

  • After 40 minutes, spread the spicy ketchup glaze over the meatloaf.
  • Bake for another 15-20 minutes, until the internal temperature reaches 160°F (71°C).

6. Rest & Serve

  • Let the meatloaf rest for 5-10 minutes before slicing.
  • Serve with mashed potatoes, roasted veggies, or a side salad.

Tips for the Best Spicy Meatloaf

✔️ No breadcrumbs? Use oats or crushed crackers.
