Spiced Apple Cider Donut Loaf

Ingredients:

  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar

  • ⅓ cup (80ml) vegetable oil or melted butter
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla extract
  • 1 egg

For the Cinnamon Sugar Crust:

  • 2 tablespoons melted butter
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon cinnamon

Instructions:

1. Reduce the Apple Cider

  • Pour the apple cider into a small saucepan and simmer over medium heat until it reduces to about ¼ cup. This intensifies the flavor. Let it cool.

2. Preheat & Prepare the Pan

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan and line it with parchment paper.

3. Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.

4. Mix Wet Ingredients

  • In another bowl, whisk together the brown sugar, granulated sugar, oil (or butter), reduced apple cider, milk, vanilla, and egg.

5. Combine & Bake

  • Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Don’t overmix!
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

6. Make the Cinnamon Sugar Crust

  • While the loaf is still warm, brush the top with melted butter.
  • Mix sugar and cinnamon in a small bowl, then sprinkle generously over the loaf.
