Here’s an easy Slow Cooker Mediterranean Chicken recipe—flavorful, juicy, and perfect for a hands-off meal!

Ingredients:

  • 2 lbs (900g) boneless, skinless chicken thighs (or breasts)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • ½ cup kalamata olives (pitted and halved)
  • ¼ cup sun-dried tomatoes (chopped)
  • ½ cup red bell pepper (sliced)
  • ½ cup onion (sliced)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional for spice)
  • 1 tbsp olive oil
  • ½ cup chicken broth (or dry white wine for extra flavor)
  • ¼ cup crumbled feta cheese (for garnish)
  • Fresh parsley (chopped, for garnish)

Instructions:

  1. Prep the slow cooker: Lightly grease the slow cooker with olive oil.
  2. Layer ingredients: Add the chicken to the slow cooker. Top with diced tomatoes, olives, sun-dried tomatoes, bell peppers, onions, and garlic.
  3. Season: Sprinkle with oregano, basil, paprika, salt, black pepper, and red pepper flakes. Drizzle with olive oil and pour in the chicken broth (or white wine).
  4. Cook:
    • Low setting: 6-7 hours
    • High setting: 3-4 hours
    • Chicken should be tender and easily shred with a fork.
  5. Finish & Serve: Garnish with crumbled feta and fresh parsley before serving.
