Here’s an easy No-Bake Cheesecake Bars recipe that’s creamy, delicious, and perfect for any occasion!

Ingredients:

For the Crust:

  • 1 ½ cups (150g) graham cracker crumbs (or digestive biscuits, crushed)
  • ¼ cup (50g) melted butter
  • 2 tablespoons sugar (optional)

For the Cheesecake Filling:

  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy whipping cream (or 1 tub of whipped topping)
  • 1 tablespoon lemon juice (optional, for a tangy flavor)

Instructions:

  1. Make the Crust – Mix the crushed graham crackers with melted butter and sugar. Press the mixture firmly into an 8x8-inch pan lined with parchment paper. Chill in the fridge for 10-15 minutes.

  2. Prepare the Filling – In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and lemon juice (if using).

  3. Whip the Cream – In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture. (If using whipped topping, just fold it in.)

  4. Assemble – Spread the cheesecake mixture evenly over the chilled crust. Smooth the top with a spatula.

  5. Chill – Cover and refrigerate for at least 4 hours (or overnight) until set.

  6. Serve – Cut into bars and enjoy! You can top with fresh berries, chocolate drizzle, or caramel for extra flavor.
