Ingredients:
- 2 lbs (900g) chicken wings (split into drumettes & flats)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional, for heat)
For the Glaze (Optional):
- 1/4 cup honey
- 1/4 cup hot sauce (or BBQ sauce)
- 2 tbsp butter, melted
- 1 tbsp soy sauce
- 1 tsp garlic powder
Instructions:
Step 1: Prep the Wings
- Pat dry the wings with paper towels (removes moisture for crispier skin).
- Toss them in olive oil, salt, black pepper, garlic powder, onion powder, paprika, and cayenne.
Step 2: Preheat the Grill
- Gas Grill: Preheat to medium heat (375-400°F / 190-205°C).
- Charcoal Grill: Set up a two-zone fire (hot & cool side).
Step 3: Grill the Wings
- Indirect Heat First: Place wings on the cooler side of the grill. Cover and cook for 20-25 minutes, flipping every 5 minutes.
- Crisp Over Direct Heat: Move wings to the hot side and grill for 3-5 minutes per side until golden brown and crispy.
- Check Doneness: Internal temp should be at least 175°F (80°C) for juicy wings.
Step 4: Glaze & Serve
- Mix glaze ingredients and brush onto wings during the last 2-3 minutes of grilling.
- Let wings rest for 5 minutes before serving.
