Muffins ready for the oven in 2 minutes

 






Here’s a super quick muffin recipe that you can mix in just 2 minutes and get straight into the oven!

2-Minute Muffins (No Mixer Needed!)

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • ¼ cup vegetable oil (or melted butter)
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup add-ins (chocolate chips, berries, nuts – optional)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients – in a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix wet ingredients – in another bowl, whisk milk, oil, egg, and vanilla.
  4. Combine – pour the wet ingredients into the dry and stir just until combined (don’t overmix!).
  5. Add mix-ins (if using) and gently fold them in.
  6. Scoop the batter into the muffin cups, filling them ¾ full.
  7. Bake for 15-18 minutes, until golden brown and a toothpick comes out clean.
