  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. Cream butter and shortening: In a large bowl, cream together the softened butter, vegetable shortening, and sugar. Beat with an electric mixer on medium-high speed for about 4-5 minutes until the mixture is light and fluffy.

  4. Add eggs: Add the eggs one at a time, beating well after each addition. Add the vanilla extract and almond extract (if using), and mix to combine.

  5. Alternate adding dry ingredients and milk: Gradually add the dry ingredients to the butter mixture in 3 parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined after each addition.

  7. Bake: Bake for 1 hour to 1 hour and 15 minutes (for a bundt pan) or about 1 hour for loaf pans. Start checking for doneness at the 1-hour mark by inserting a toothpick into the center. If it comes out clean, the cake is ready.

  8. Cool: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
