Milk Brioche Rolls Recipe
Soft, fluffy, and slightly sweet, these Milk Brioche Rolls are perfect for breakfast or as a side for any meal!
Ingredients:
- 3 ½ cups (440g) all-purpose or bread flour
- ¼ cup (50g) granulated sugar
- 1 packet (7g) instant yeast
- 1 teaspoon salt
- ½ cup (120ml) warm milk (about 110°F / 43°C)
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- ½ cup (115g) unsalted butter, softened
- 1 egg yolk + 1 tablespoon milk (for egg wash)
Instructions:

Activate the yeast: In a small bowl, mix warm milk with yeast and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.

Make the dough: In a large mixing bowl, combine flour, sugar, and salt. Add the eggs, vanilla, and yeast mixture. Mix until a sticky dough forms.

Incorporate the butter: Gradually add softened butter, kneading continuously. Knead for about 10–15 minutes until the dough is smooth and elastic. (You can use a stand mixer with a dough hook.)

First rise: Place the dough in a greased bowl, cover it with a clean towel, and let it rise for 1.5–2 hours, or until doubled in size.

Shape the rolls: Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them on a baking tray lined with parchment paper.

Second rise: Cover and let the rolls rise for another 45 minutes until puffy.

Bake: Preheat the oven to 350°F (180°C). Brush the rolls with egg wash and bake for 18–20 minutes, or until golden brown.
