Mexican Street Corn Dip (Elote Dip)
A creamy, cheesy dip inspired by Mexican elote (street corn)—perfect for parties or snacking!
Ingredients:
- 2 cups corn kernels (grilled, roasted, or canned & drained)
- 1/2 cup mayonnaise
- 1/2 cup sour cream (or Greek yogurt)
- 1 cup crumbled Cotija cheese (or feta)
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 clove garlic, minced
- Juice of 1 lime
- 1/4 cup chopped cilantro
- 1/2 cup diced jalapeño (optional, for spice)
Instructions:
- Roast or grill the corn – If using fresh corn, grill it for a smoky flavor, then cut it off the cob. If using canned, lightly sauté for caramelization.
- Mix the base – In a bowl, combine mayo, sour cream, lime juice, garlic, chili powder, and smoked paprika.
- Add the corn & cheese – Stir in the roasted corn and crumbled Cotija cheese.
- Garnish & serve – Top with cilantro and more chili powder. Serve warm or cold with tortilla chips, crackers, or veggies.
