Ingredients
For the Salmon:
- 2 salmon fillets
- 2 tbsp butter (melted)
- 2 tbsp lemon juice
- 2 cloves garlic (minced)
- 1 tsp Dijon mustard (optional)
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp fresh parsley or dill (for garnish)
- Lemon slices (for serving)
For the Roasted Potatoes & Broccoli:
- 2 cups baby potatoes (halved)
- 2 cups broccoli florets
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp red pepper flakes (optional)
Instructions
1. Roast the Potatoes & Broccoli
- Preheat oven to 400°F (200°C).
- Toss baby potatoes with 1 tbsp olive oil, salt, pepper, garlic powder, and paprika. Spread them on a baking sheet and roast for 20 minutes.
- After 20 minutes, add broccoli to the same sheet, drizzle with 1 tbsp olive oil, and toss. Roast for another 15 minutes, or until crispy.
2. Prepare the Lemon Butter Sauce
- In a small bowl, mix melted butter, lemon juice, garlic, Dijon mustard, paprika, salt, and pepper.
3. Cook the Salmon
Oven Method:
- Place salmon fillets on a parchment-lined baking sheet.
- Brush with lemon butter sauce and top with lemon slices.
- Bake at 400°F (200°C) for 12–15 minutes, or until flaky.
Pan-Seared Method:
- Heat 1 tbsp oil in a pan over medium-high heat.
- Sear salmon for 3–4 minutes per side, then pour the lemon butter sauce over it.
- Cook for another 2 minutes, spooning the sauce over the salmon.
4. Serve & Enjoy
- Plate the salmon with roasted potatoes and broccoli.
- Garnish with fresh parsley or dill and extra lemon slices.
