Irresistible Garlic & Herb Potatoes
Ingredients:
- 3 potatoes, peeled and diced
- 2 glasses of water
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- A bunch of coriander and parsley, chopped
- 2 tbsp olive oil or butter
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp cumin (optional for extra flavor)
Instructions:

Boil the Potatoes
- In a pot, bring 2 glasses of water to a boil.
- Add the diced potatoes and cook for 10-15 minutes, until they are tender but not mushy.
- Drain and set aside.

Sauté the Aromatics
- In a large pan, heat olive oil or butter over medium heat.
- Add the chopped onion and cook until soft and golden.
- Stir in the minced garlic and cook for 30 seconds until fragrant.

Combine Everything
- Add the boiled potatoes to the pan and toss well.
- Season with salt, pepper, paprika, and cumin.
- Stir gently to coat the potatoes in the spices and aromatics.

Finish with Fresh Herbs
- Remove from heat and mix in the chopped coriander and parsley.

Serve & Enjoy!
- These potatoes can be enjoyed on their own or as a side dish with grilled meats, fish, or eggs.
