(Magically makes its own crust while baking!)
Ingredients:
- 4 large eggs
- ½ cup unsalted butter (melted)
- ¾ cup granulated sugar
- ½ cup all-purpose flour
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions:
- Preheat Oven to 350°F (175°C). Grease a 9-inch pie dish.
- Blend Everything Together – In a blender, combine eggs, melted butter, sugar, flour, milk, vanilla, baking powder, and salt. Blend until smooth.
- Stir in Coconut – Add shredded coconut and mix gently.
- Pour into Pie Dish – The batter will be thin, but it will bake into layers!
- Bake for 45-50 minutes until the top is golden brown and the center is set.
- Cool Completely before slicing. The pie will form a soft crust on its own!
