Homemade Soft Caramels Recipe

These buttery, chewy caramels melt in your mouth and are perfect for gifts or treats!


Ingredients

✔️ 1 cup (2 sticks) unsalted butter
✔️ 1 cup light corn syrup
✔️ 2 ½ cups granulated sugar
✔️ 1 can (14 oz) sweetened condensed milk
✔️ 1 teaspoon vanilla extract
✔️ ¼ teaspoon salt


Instructions

1. Prepare Your Pan

  • Line an 8x8-inch or 9x13-inch baking dish with parchment paper and lightly butter it.

2. Heat the Ingredients

  • In a heavy-bottomed saucepan, melt butter over medium heat.
  • Stir in corn syrup, sugar, and sweetened condensed milk.

3. Cook to the Right Temperature

  • Bring the mixture to a gentle boil, stirring constantly with a wooden spoon.
  • Cook until the temperature reaches 240°F (115°C) on a candy thermometer (soft-ball stage).
  • This takes about 15-20 minutes.

4. Add Flavor & Set

  • Remove from heat and stir in vanilla extract and salt.
  • Pour into the prepared pan and let cool at room temperature for 2-3 hours.

5. Cut & Wrap

  • Once firm, cut into small squares and wrap in wax paper.

Tips for Perfect Caramels

✔️ Don’t rush – Stir constantly to avoid burning.
✔️ Use a candy thermometer for accuracy.
✔️ Add sea salt on top for salted caramels!
