Ingredients:
- 2 cups grated zucchini (about 2 medium zucchinis, excess water squeezed out)
- 1 ½ cups all-purpose flour (or whole wheat flour)
- ½ cup Greek yogurt (plain, full-fat or low-fat)
- ½ cup honey or maple syrup (or ¾ cup brown sugar)
- 2 eggs
- ¼ cup olive oil or melted butter
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions:

Preheat Oven & Prep Pan
- Preheat oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan or line it with parchment paper.
