Greek Yogurt Zucchini Bread









Here’s a moist and healthy Greek Yogurt Zucchini Bread recipe that's perfect for breakfast or a snack!

Ingredients:

  • 2 cups grated zucchini (about 2 medium zucchinis, excess water squeezed out)
  • 1 ½ cups all-purpose flour (or whole wheat flour)
  • ½ cup Greek yogurt (plain, full-fat or low-fat)
  • ½ cup honey or maple syrup (or ¾ cup brown sugar)
  • 2 eggs
  • ¼ cup olive oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions:

  1. Preheat Oven & Prep Pan

    • Preheat oven to 350°F (175°C).
    • Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Mix Wet Ingredients

    • In a large bowl, whisk eggs, Greek yogurt, honey (or sugar), oil, and vanilla until smooth.
  3. Combine Dry Ingredients

    • In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine & Fold in Zucchini

    • Gradually mix the dry ingredients into the wet mixture.
    • Gently fold in the grated zucchini and optional walnuts or chocolate chips.
  5. Bake

    • Pour batter into the prepared loaf pan.
    • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve

    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
