  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee (or hot water)

For the Chocolate Frosting:

  • 1 cup unsalted butter (softened)
  • 3 ½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup heavy cream (more if needed)
  • 2 teaspoons vanilla extract
  • A pinch of salt

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, oil, and vanilla. Beat until combined.
  4. Slowly mix in hot coffee (batter will be thin, but that’s okay!).

Step 2: Bake the Cake

  1. Divide the batter evenly between the pans.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Make the Frosting

  1. Beat the butter in a large bowl until creamy.
  2. Add cocoa powder and powdered sugar, mixing slowly.
  3. Pour in heavy cream, vanilla, and salt, and beat until smooth and fluffy.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate. Spread frosting over the top.
  2. Add the second layer and cover the entire cake with frosting.
  3. Smooth out the frosting and decorate as desired.
