Ingredients
For the Crust:
- 1 ½ cups (150g) graham cracker crumbs
- ¼ cup (50g) sugar
- ½ cup (115g) melted butter
For the Cheesecake Filling:
- 2 (8 oz) packs cream cheese, softened
- ½ cup (100g) sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup (120ml) heavy cream
For the Caramel Topping:
- 1 cup (200g) sugar
- ¼ cup (60ml) water
- ½ cup (120ml) heavy cream
- 2 tbsp (30g) butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.
Step 2: Make the Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla and heavy cream until creamy.
- Pour the filling over the cooled crust.
Step 3: Bake the Cheesecake
- Bake for 45-50 minutes until the center is slightly jiggly.
- Turn off the oven and let it cool inside for 1 hour. Then refrigerate for at least 4 hours.
Step 4: Make the Caramel Topping
- In a saucepan, heat sugar and water over medium heat until golden brown.
