Ingredients
For the Meatloaf:
- 2 lbs ground beef (80/20)
- 1 cup crushed Ritz crackers (about 1 sleeve)
- ½ cup milk
- 2 eggs
- ½ cup shredded cheddar cheese
- ½ cup finely diced onion
- ½ cup finely diced green bell pepper (optional)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
For the Glaze:
- ½ cup ketchup
- ¼ cup brown sugar
- 1 tsp yellow mustard
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) and grease a loaf pan or baking dish.
- Prepare Meat Mixture: In a large bowl, mix the ground beef, crushed Ritz crackers, milk, eggs, cheddar cheese, onion, bell pepper, salt, pepper, garlic powder, and onion powder. Combine until just mixed—don’t overwork the meat.
- Shape & Bake: Form the meat mixture into a loaf shape and place it in the prepared pan. Bake for 30 minutes.
- Make the Glaze: While the meatloaf bakes, mix ketchup, brown sugar, and mustard in a small bowl.
