Classic Vanilla Butter Cake

Ingredients:

  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) buttermilk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: Beat butter and sugar together until light and fluffy (about 3-5 minutes).
  4. Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla.
  5. Alternate dry and wet ingredients: Add the flour mixture in three additions, alternating with buttermilk, starting and ending with the flour. Mix until just combined.
  6. Bake: Divide batter between the pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool: Let cakes cool in the pans for 10 minutes, then transfer to a wire rack.

Buttermilk Sauce

Ingredients:

  • ½ cup (120ml) buttermilk
  • ½ cup (100g) granulated sugar
  • 4 tbsp (56g) unsalted butter
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Instructions:

  1. In a small saucepan, combine buttermilk, sugar, and butter over medium heat. Stir until the butter melts.
  2. Add baking soda (it will foam up) and cook for 1-2 minutes, stirring constantly.
  3. Remove from heat and stir in vanilla. Let cool slightly before using.

To Serve:

  • Drizzle warm buttermilk sauce over the cake layers before assembling for extra moisture.
  • Serve slices with an extra drizzle of sauce and a scoop of vanilla ice cream.
