Here’s a rich and moist layered chocolate cake recipe with a luscious chocolate frosting—perfect for any occasion!

Ingredients:

For the Cake:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 1¾ cups (350g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk (or milk + 1 tablespoon vinegar)
  • 1 cup (240ml) hot coffee (enhances the chocolate flavor)

For the Chocolate Frosting:

  • 1 cup (226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ⅓ cup (80ml) heavy cream (adjust for consistency)

Instructions:

1. Make the Cake Batter:

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
  • In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  • Add oil, eggs, vanilla, and buttermilk. Mix until combined.
  • Gradually stir in hot coffee (batter will be thin, but that’s normal!).

2. Bake the Cake:

  • Divide batter evenly between the pans.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

3. Make the Chocolate Frosting:

  • Beat butter until creamy.
  • Gradually add powdered sugar, cocoa powder, and salt, mixing on low speed.
  • Add vanilla and heavy cream, beating until smooth and fluffy.

4. Assemble the Cake:

  • Place one cake layer on a serving plate. Spread a layer of frosting on top.
  • Add the second cake layer and frost the top and sides evenly.
  • Optionally, decorate with chocolate shavings, sprinkles, or berries.

5. Chill & Serve:

  • Let the cake sit for at least 30 minutes before slicing.
  • Store leftovers in an airtight container at room temperature for up to 3 days.

Extra Tips for a Perfect Cake:

Use hot coffee – It deepens the chocolate flavor without making the cake taste like coffee.
Sift the cocoa powder to avoid lumps in the batter and frosting.
Chill the cake before slicing for clean, neat layers.
