Caramel Pecan Bundt Cake

Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup unsalted butter (softened)
  • 1 ½ cups brown sugar
  • 4 eggs
  • 1 cup sour cream (or yogurt)
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

For the Caramel Glaze:

  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup heavy cream
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Cake Batter:

    • Preheat oven to 350°F (175°C) and grease a bundt pan.
    • In a bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
    • In another bowl, beat butter and brown sugar until creamy.
    • Add eggs one at a time, then mix in vanilla and sour cream.
    • Slowly add dry ingredients and mix until combined.
    • Fold in chopped pecans.
  2. Bake the Cake:

    • Pour batter into the prepared bundt pan.
    • Bake for 45-55 minutes, or until a toothpick comes out clean.
    • Let cool in the pan for 10 minutes, then transfer to a wire rack.
  3. Make the Caramel Glaze:

    • In a saucepan, melt butter and brown sugar over medium heat.
    • Stir in heavy cream and salt, then simmer for 2 minutes.
    • Remove from heat and add vanilla extract. Let it cool slightly.
  4. Assemble:

    • Pour warm caramel glaze over the cooled cake.
    • Sprinkle extra pecans on top for crunch.
