Ingredients:
For the Caramel:
- ½ cup sugar
- 2 tbsp water
For the Flan:
- 2 cups milk (or evaporated milk for a richer taste)
- ½ cup sugar
- 3 eggs
- 1 tsp vanilla extract
Instructions:
1. Prepare the Caramel:
- In a small saucepan, heat ½ cup sugar and 2 tbsp water over medium heat.
- Stir gently until the sugar melts and turns golden brown.
- Quickly pour the caramel into a baking dish or ramekins, swirling to coat the bottom. Set aside.
2. Make the Flan Mixture:
- In a pot, heat 2 cups milk with ½ cup sugar until warm (don’t boil). Stir until the sugar dissolves.
- In a bowl, whisk 3 eggs and 1 tsp vanilla extract.
- Slowly add the warm milk to the eggs while whisking to prevent curdling.
3. Bake the Flan:
- Pour the mixture over the caramel in the baking dish.
- Place the dish in a larger baking pan and fill the outer pan with hot water (bain-marie).
- Bake at 160°C (320°F) for 45-50 minutes, until set but slightly jiggly in the center.
4. Cool & Serve:
- Let the flan cool, then refrigerate for at least 4 hours (preferably overnight).
- Run a knife around the edges and invert onto a plate to release the caramel.
