Blueberry Loaf Cake

 







Here’s a Blueberry Loaf Cake recipe with a sweet glaze, just like the one in your image!

Ingredients

For the Cake:

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) milk or buttermilk
  • 1 cup (150g) fresh or frozen blueberries
  • 1 tbsp flour (to coat blueberries, prevents sinking)

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tbsp lemon juice or milk
  • ½ tsp vanilla extract (optional)

Instructions

  1. Preheat Oven & Prepare Pan

    • Preheat oven to 350°F (175°C).
    • Grease and flour a 9x5-inch loaf pan.
  2. Mix Dry Ingredients

    • In a bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter & Sugar

    • In another bowl, beat butter and sugar until light and fluffy (2-3 minutes).
  4. Add Eggs & Vanilla

    • Beat in eggs, one at a time.
    • Add vanilla extract and mix.
  5. Combine Wet & Dry Ingredients

    • Alternate adding dry ingredients and milk to the butter mixture, mixing until just combined.
  6. Add Blueberries

    • Toss blueberries with 1 tbsp flour to prevent them from sinking.
    • Gently fold them into the batter.
  7. Bake

    • Pour batter into the loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
    • Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Prepare the Glaze

    • Mix powdered sugar and lemon juice (or milk) until smooth.
    • Drizzle over the cooled cake.
  9. Garnish & Serve

    • Top with fresh blueberries if desired.
    • Slice and enjoy!
