This soft and fluffy apple almond cake is perfect for fall or anytime you crave a light, nutty dessert. The combination of tender apples, crunchy almonds, and a slightly crispy sugar crust makes it irresistible!


Ingredients:

For the Cake:

  • 2 large apples, peeled and thinly sliced
  • 3 eggs
  • 3/4 cup granulated sugar
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional, for warmth)

For the Topping:

  • 1/4 cup sliced almonds
  • 1 tbsp sugar (for a crispy top)

Instructions:

Step 1: Prepare the Batter

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, whisk together eggs and sugar until light and fluffy.
  3. Stir in melted butter, milk, and vanilla extract until well combined.
  4. In a separate bowl, mix flour, baking powder, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture until smooth.

Step 2: Add the Apples

  1. Gently fold in the apple slices until evenly coated with batter.

Step 3: Assemble & Bake

  1. Pour the batter into the prepared pan and spread evenly.
  2. Sprinkle the sliced almonds and sugar on top for a crunchy finish.
  3. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Step 4: Cool & Serve

  1. Let the cake cool in the pan for 10 minutes, then remove the springform ring.
  2. Serve warm or at room temperature, with whipped cream, vanilla ice cream, or caramel sauce!
