Ingredients:
For the Soup:
- 1 ½ lbs boneless, skinless chicken breasts (or thighs)
- 4 cups chicken broth
- 1 cup heavy cream or whole milk
- 1 small onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp poultry seasoning (optional)
- 2 tbsp butter
For the Dumplings:
- 1 cup all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup whole milk
- 2 tbsp melted butter
Instructions:
1. Cook the Chicken:
- Add chicken, broth, onion, carrots, celery, garlic, salt, pepper, thyme, poultry seasoning, and butter to the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
2. Shred the Chicken:
- Remove the chicken, shred it with two forks, then return it to the slow cooker.
3. Make the Dumplings:
- In a bowl, whisk together flour, baking powder, and salt.
- Stir in milk and melted butter until a thick dough forms.
