Cajun Shrimp Scampi,
Ingredients:
- 450g (1 lb) large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon (zest and juice)
- 1 cup chicken or vegetable broth (or white wine)
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon crushed red pepper flakes (optional, for extra spice)
- 1/4 cup chopped fresh parsley
- 300g (10 oz) linguine or spaghetti (cooked according to package instructions)
- Salt and freshly ground black pepper, to taste
Instructions:
1. Season the Shrimp:
- Toss the shrimp with Cajun seasoning, smoked paprika (if using), and a pinch of salt.
2. Sear the Shrimp:
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the shrimp in a single layer and cook for 2 minutes per side, until pink and slightly charred. Remove from the skillet and set aside.
3. Make the Scampi Sauce:
- In the same skillet, add the remaining olive oil and butter.
- Add the minced garlic and sauté for 30 seconds until fragrant (do not burn).
- Stir in the chicken broth (or white wine) and lemon juice, scraping up any browned bits from the bottom of the skillet.
- Let the sauce simmer for 3-4 minutes to reduce slightly.
4. Combine and Serve:
- Return the shrimp to the skillet and toss to coat in the sauce.
- Add the cooked pasta and toss everything together until well combined.
- Stir in the lemon zest, parsley, and crushed red pepper flakes (if desired). Adjust seasoning with salt and pepper.
Serving Suggestions:
- Serve immediately with extra lemon wedges and a sprinkle of Parmesan cheese if desired.
