Creamy Cauliflower Au Gratin – A Healthy and Delicious Dish
This Cauliflower Au Gratin is a lightened-up version of the classic potato gratin, featuring tender cauliflower in a creamy, cheesy sauce with a golden crispy topping. It’s a perfect side dish for any meal!
Ingredients (Serves 4-6):
For the Cauliflower:
- 1 large head of cauliflower, cut into florets
- 1 tbsp olive oil or butter
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg (optional, adds depth of flavor)
For the Creamy Sauce:
- 2 tbsp butter
- 2 tbsp flour (or almond flour for gluten-free)
- 1 cup milk (or unsweetened almond milk for lighter version)
- 1/2 cup Greek yogurt or light cream cheese
- 1 cup grated cheese (cheddar, Gruyère, or Parmesan)
For the Topping:
- 1/2 cup breadcrumbs (or almond meal for a low-carb version)
- 1/4 cup Parmesan cheese
- 1 tbsp olive oil or melted butter
Instructions:
Step 1: Prepare the Cauliflower
- Preheat oven to 375°F (190°C).
- Steam or boil the cauliflower florets for about 5 minutes, until slightly tender. Drain and set aside.
Step 2: Make the Creamy Sauce
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk, stirring constantly until thickened.
- Add Greek yogurt (or cream cheese), salt, pepper, garlic, and nutmeg. Stir until smooth.
- Mix in 1 cup of grated cheese and stir until melted.
Step 3: Assemble & Bake
- Place the cauliflower in a greased baking dish and pour the cheese sauce evenly over the top.
- In a small bowl, mix breadcrumbs, Parmesan, and olive oil. Sprinkle over the dish.
- Bake for 20-25 minutes, until golden and bubbly.

- Let it cool for a few minutes, then serve warm!
