Coconut Chewies – A Sweet and Chewy Delight
These Coconut Chewies are rich, buttery, and perfectly chewy with a golden crispy edge. They’re incredibly easy to make and require just a few simple ingredients!
Ingredients:
- 1/2 cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups sweetened shredded coconut
Instructions:
Step 1: Prepare the Batter
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the melted butter and brown sugar until smooth.
- Add the egg and vanilla extract, and whisk until well combined.
Step 2: Add Dry Ingredients
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the shredded coconut, ensuring it's evenly distributed.
Step 3: Bake to Perfection
- Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges turn golden brown while the centers remain soft.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
Serving & Storage:
