Cabbage fat-burning soup
Ingredients:
- 1/2 head of cabbage, chopped
- 1 onion, diced
- 2-3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 4-6 cups vegetable or chicken broth
- 1 tsp olive oil
- 1 tsp black pepper
- 1/2 tsp salt (optional)
- 1/2 tsp red pepper flakes (optional)
- 1 tsp dried oregano or thyme
- 1/2 tsp cumin (optional for extra flavor)
- 1-2 cups chopped spinach or kale (optional)
Instructions:
- Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.
- Add carrots, celery, and bell pepper. Cook for 3-5 minutes.
- Stir in cabbage, diced tomatoes, broth, and seasonings.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes until vegetables are tender.
- Add spinach or kale in the last 5 minutes (if using).
- Adjust seasoning as needed and serve warm.
