Crispy Baked Parmesan Potato Wedges
Ingredients:
- 3 large russet potatoes (or Yukon Gold)
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika (optional, for extra flavor)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano or Italian seasoning
- 1 tbsp cornstarch (for extra crispiness)
- Fresh parsley (for garnish, optional)
- Dipping sauce (ranch, ketchup, or garlic aioli)
Instructions:
Step 1: Prep the Potatoes
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and cut the potatoes into thin wedges (leave the skin on for extra crispiness).
- Soak in cold water for 20-30 minutes to remove excess starch (makes them crispier!). Drain and pat dry.
Step 2: Season & Coat
- In a large bowl, toss the potato wedges with olive oil.
- In a separate bowl, mix Parmesan, cornstarch, garlic powder, paprika, salt, pepper, and oregano.
- Toss the potatoes in the seasoning mix until well coated.
Step 3: Bake to Perfection
- Arrange the wedges skin-side down on the baking sheet (don’t overcrowd them!).
- Bake for 35-40 minutes, flipping halfway through, until golden brown and crispy.
Step 4: Serve & Enjoy
- Sprinkle with fresh parsley and extra Parmesan.
