Crispy Baked Parmesan Potato Wedges

Ingredients:

  • 3 large russet potatoes (or Yukon Gold)
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika (optional, for extra flavor)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • 1 tbsp cornstarch (for extra crispiness)
  • Fresh parsley (for garnish, optional)
  • Dipping sauce (ranch, ketchup, or garlic aioli)

Instructions:

Step 1: Prep the Potatoes

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and cut the potatoes into thin wedges (leave the skin on for extra crispiness).
  3. Soak in cold water for 20-30 minutes to remove excess starch (makes them crispier!). Drain and pat dry.

Step 2: Season & Coat

  1. In a large bowl, toss the potato wedges with olive oil.
  2. In a separate bowl, mix Parmesan, cornstarch, garlic powder, paprika, salt, pepper, and oregano.
  3. Toss the potatoes in the seasoning mix until well coated.

Step 3: Bake to Perfection

  1. Arrange the wedges skin-side down on the baking sheet (don’t overcrowd them!).
  2. Bake for 35-40 minutes, flipping halfway through, until golden brown and crispy.

Step 4: Serve & Enjoy

  1. Sprinkle with fresh parsley and extra Parmesan.
  2. Serve hot with your favorite dipping sauce!
