Instructions:


1. Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Allow the pasta to cool completely.

2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives (if using), and parsley.

3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.

4. Pour the dressing over the pasta and vegetables, and toss until everything is evenly coated.

5. If desired, sprinkle grated Parmesan cheese over the salad before serving.
