Cod with cream, traditional Portuguese recipe

 






Here's a traditional Portuguese recipe for "Bacalhau com Natas" (Cod with Cream):


Ingredients:


- 500g salted codfish (bacalhau)

- 500g potatoes, thinly sliced

- 2 onions, thinly sliced

- 3 cloves of garlic, minced

- 200ml heavy cream

- 100ml milk

- 50g butter

- 2 tablespoons olive oil

- Salt and pepper to taste

- Parsley for garnish (optional)


Instructions:


1. Start by desalinating the codfish. Rinse it under cold water, then soak it in a bowl of cold water for at least 24 hours, changing the water 2-3 times.

2. After desalinating, remove the skin and bones from the codfish, then cut it into bite-sized pieces.

3. Preheat your oven to 180°C (350°F).

4. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and minced garlic, and cook until softened and translucent.

5. Add the codfish pieces to the skillet and cook for a few minutes until lightly browned.

6. In a separate saucepan, melt the butter over medium heat. Add the sliced potatoes and cook until they are slightly tender.

7. In a bowl, mix together the heavy cream and milk. Season with salt and pepper to taste.

8. In a baking dish, layer half of the cooked potatoes, followed by half of the codfish mixture. Repeat the layers with the remaining potatoes and codfish.

9. Pour the cream mixture over the layers in the baking dish.

10. Bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and bubbly.

11. Garnish with chopped parsley if desired, and serve hot.
