          Cloud-Soft Condensed Milk Bread Recipe


INGREDIENTS:


⏺ 1 Egg, large

⏺ 3 tablespoons (60g) Sweetened Condensed Milk

⏺ 1 teaspoon (3g) Active Dry Yeast

⏺ 0.6 cup (140ml) Milk, lukewarm

⏺ 2 cups (300g) Bread Flour or Wheat Flour

⏺ 1/2 teaspoon (3g) Salt

⏺ 2 tablespoons (28g) Unsalted Butter, softened, plus extra for greasing and topping

⏺ 1 Egg Wash (1 egg, beaten)


INSTRUCTIONS:


1️⃣. Activate the Yeast:

In a small bowl, mix the lukewarm milk with the active dry yeast. Let it sit for about 5-10 minutes until frothy, indicating the yeast is active and ready to use.

2️⃣. Mix the Dough:

In a large mixing bowl, beat the egg lightly. Stir in the sweetened condensed milk until well combined.

3️⃣. Combine Wet and Dry Ingredients:

Add the frothy yeast mixture to the bowl and mix.

Gradually incorporate the bread flour and salt, mixing until a sticky dough forms.

4️⃣. Knead the Dough:

Add the softened unsalted butter to the dough and knead until the butter is fully incorporated, and the dough becomes smooth and elastic.

5️⃣. First Rise:

Place the dough in a greased bowl, covering it with a clean kitchen towel. Allow it to rise in a warm, draft-free area until it doubles in size, about 1 hour.

6️⃣. Shape and Second Rise:

Once the dough has doubled in size, punch it down gently to release any air bubbles.

Transfer the dough to a lightly floured surface and shape it to fit your greased 20x20cm mold.

Cover the mold with the towel again and let the dough rise for another 30-40 minutes, or until it puffs up nicely.

7️⃣. Preheat and Prepare for Baking:

Preheat your oven to 170°C (340°F).

Gently brush the top of the risen dough with the beaten egg wash for a golden finish.

8️⃣. Bake:

Place the mold in the preheated oven and bake for 20 minutes, or until the bread is golden brown on top and sounds hollow when tapped.

9️⃣. Cool and Serve:

Remove the bread from the oven and brush the top with a little more unsalted butter for a soft, glossy crust.

Let the bread cool in the mold for a few minutes before transferring it to a wire rack to cool completely.

10️⃣. Enjoy:

Slice the bread and enjoy the soft, fluffy texture and the subtle sweetness from the condensed milk. It's perfect on its own or with a spread of butter or jam.
